Siete Chicken Enchiladas
I can't even begin to tell you how big a fan I am of Siete. If you don't follow them or if you haven't tried their products - what are you waiting for!? GO NOW! Their almond flour tortillas, seasoning packets, tortilla chips, Mexican cookies and enchilada sauces are my favorite. That's a lot...sorry, not sorry. I love all things Siete! And they're an incredibly nice and down to earth family. They make a variety of grain-free tortillas, but the almond flour ones are my favorite. Enjoy!

Elvis Presley Jr Oatmeal
I came across this amazing bowl of goodness at a local cafe and just about died. It haunted my thoughts for days and I HAD to re-create it at home. Subbing out the peanut butter for almond butter and adjusting portions I finally got what I was after - the ultimate at-home Elvis Presley Jr Oatmeal! What a hunk of burning bowl of lovin' goodness!

Spaghetti Squash with Meatballs
Spaghetti is the ultimate comfort food. It reminds me of family dinners when I was little, eating bread and pasta, talking about our day. It's like a heaping plate of love. When I realized that a lot of grains were the culprit for my inflammation that I was struggling with I was determined to keep my beloved spaghetti in my life. I've tried quite a few variations of spaghetti with other mock "noodles" but nothing comes close to that heartfelt comfort dinner like spaghetti noodles...until I tried spaghetti squash. Ok I know...it's NOT a noodle, sure, but it's the perfect substitution and better than many of the other zoodle/boodle/noodles I've tried!
