Loaded Taco Sweet Potato

I ate strictly Paleo for almost ten years and this was and still is one of my favorite taco variations that I make. It's quick, easy and fun to mix up the toppings.

Ingredients

4 small to medium-sized Sweet Potatoes

1-2 TB Olive Oil

1 lb Ground Turkey

Siete Mild Taco Seasoning

Tomato

Green Onions

Olives

Lettuce, shredded


Optional Toppings:

Cheese

Jalapeno

Sour Cream

Plain Greek Yogurt

Preparation

  1. Bake sweet potatoes. Oven is always great, but if you're short on time, stab the potatoes with a knife or fork (to vent, or they can explode) and toss those babies into the microwave. Each potato takes approximately 3 minutes to bake in the microwave. A huge time saver!

  2. Heat olive oil on medium heat and add ground turkey.

  3. Cook ground turkey until brown.

  4. Add Siete seasoning with 1/2 cup water.

  5. Cover and let simmer while you prep toppings and bake sweet potatoes.

  6. Dice tomato, chop lettuce and slice green onions.

  7. Serve taco meat over the bake sweet potatoes and all your amazing yummy toppings!
